Oyama is most particular about the quality of its offal.After trying all kinds of offal, we finally made a contract with a farm in the prefecture and used only the small intestines of domestically raised Japanese Black beef! This is an easy course that also allows you to enjoy yuzu offal.

~Oyama's specialty: Offal~
The plump offal is made from the finest domestic Wagyu beef, sourced directly from a contracted farm with strict quality control, and is so tender that it overturns the conventional image of "horumon" (offal). The chewy small intestine is combined with the mild fat, making the fat melt in your mouth, filling your mouth with the aroma of "motsu."The small intestine we handle is what is known as the "maru-cho" in yakiniku restaurants, and has just the right amount of firmness yet can be easily chewed, making it truly worthy of the description "tender."
~Oyama's second specialty: carefully selected vegetables~
We use carefully selected vegetables from contracted farmers.Additionally, it contains burdock, which is a rare ingredient in motsunabe.The firm texture of the offal, the crunchy burdock root even after cooking, the sweet cabbage, and the chives, which are an essential ingredient in motsunabe, are all important ingredients that further enhance the deliciousness.
~Oyama's Specialty #3 [Secret Soup]~
There are four types of soup: miso, soy sauce, salt, and spicy miso.The secret ingredient is the chicken bone-based "secret soup stock" that has been passed down since the restaurant was founded.Our original soup is designed so that it does not become too strong even if it is boiled for too long, and you can enjoy it from the champon in the latter half of the meal to the rice porridge at the end.Enjoy the elegant taste and richness.
