What Oyama is most particular about is the quality of offal.After trying all kinds of giblets, we contracted with a farm in the prefecture to use only the small intestines of Japanese Japanese black beef!! This is an easy course where you can enjoy yuzu giblets to your heart's content.

~One of Oyama's specialties [Motsu]~

The plump offal is made from the highest quality domestic Wagyu beef that is purchased directly from contracted farms that carry out thorough quality control, so it is so tender that it overturns the conventional image of "offal", and has a chewy small intestine and smooth fatty meat. The fatty meat is so soft that it melts, and the aroma of ``offal'' fills your mouth.The small intestine we sell at our restaurant is what Yakiniku restaurants call the "round intestine," and it has just the right amount of chewiness, yet can be chewed properly, so the expression "plump" is apt.

~Oyama Specialties Part 2 [Selected Vegetables]~

We use carefully selected vegetables from contracted farmers.In addition, ``burdock'' is included, which is rare as an ingredient in motsu nabe.The plump texture of offal, the crunchy burdock root even after cooking, the sweet cabbage, and the chives that are indispensable for offal hotpot are important ingredients that enhance the deliciousness even more.

Four types of soup: miso, soy sauce, shio, and spicy miso.The deciding factor is the chicken bone-based "secret soup stock" that has been passed down since the company's founding.The soup that we have developed uniquely does not get too strong even if it is overcooked, so that you can enjoy it even from the second half of the soup to the last half of the soup, which is delicious.Please enjoy the elegant taste and richness.
